Easy Low Carb Rhubarb Sauce

This recipe is fine for all stages of the program –  the serving size will be dependent on how much you cook down the sauce. 8 cups rhubarb is 30 net carbs.  So, for example, If you cooked this down and had 2 cups of sauce, you could add about 1 tbsp to something for it to be 1 net carb.

Ingredients

  • 8 cups rhubarb (washed and cut into 1 inch pieces)
  • 1 cup water
  • 1 package of sugar free drink mix like strawberry – a red one gives nice colour (this is an optional ingredient and you can choose to use a sweetener of your choice  to taste instead)

Directions

  1. Combine all ingredients in a saucepan.
  2. Bring to a boil.
  3. Lower the heat to medium low and simmer until rhubarb has disintegrated into a thick sauce.
  4. Tastes great when mixed with 0 fat plain Greek yogurt.
