This recipe is fine for all stages of the program
- 1 small cauliflower
PESTO
- 1 cup fresh basil
- 1 clove garlic or 1 tsp of garlic powder (fresh is ALWAYS better as far as taste goes but the powder is fine in a pinch)
- 1 Tbsp. fresh lemon juice
- 1/4 cup olive oil
- salt and black pepper, to taste
Directions
- Cut the cauliflower, including the stalk, into ¾” thick slices. Set aside.
- PESTO – In a food processor or blender, add the basil, garlic and lemon juice.
- Turn on the machine and pulse a few times.
- Slowly add the olive oil in a constant stream while the food processor or blender is running on low.
- Stop to scrape down the sides of the food processor with a rubber spatula. Blend on low until smooth.
- Season pesto with salt and pepper.
- Brush both sides of the cauliflower steaks with pesto ( You can use a spoon to spread it or something like a silicone pastry brush)
- Place the cauliflower steaks on a grill over medium heat OR place on a raised baking rack and bake in the oven at 350 C until cooked to your desired tenderness (about 20 minutes would be the minimum)
- If cooking on a grill, cook for 4-5 minutes on each side or until cauliflower is tender but still firm.
- Serve warm with a protein of your choice.
NOTE: Fire up the grill and make grilled cauliflower steaks with basil pesto for a healthy and simple summer dinner!
