Cauliflower Steaks with Garlic, Lemon and Parsley

This recipe is fine for all stages of the program.

Ingredients

  • 1 head cauliflower
  • 3 Tbsp. olive oil
  • 1 cup parsley, finely chopped
  • 4 cloves garlic, finely chopped
  • juice and zest of ½ lemon
  • 1 tsp. paprika
  • salt and pepper, to taste

Directions

  1. Preheat your oven to 475°F.
  2. Line a large cookie sheet with tinfoil.
  3. Remove the leaves from the cauliflower and try not to damage too much of the stem.
  4. Thoroughly rinse, and then slice the cauliflower into ½” thick slices.
  5. At the ends, you will have odd bits that are a little less pretty, and that’s okay.
  6. They get extra caramelized and taste great.
  7. In a large bowl combine olive oil, parsley, garlic, lemon juice and zest, paprika, and a small pinch of salt
  8. Carefully toss the cauliflower in this mixture and arrange in one even layer on the cookie sheet.
  9. If you have extra of the mixture, slather it on top of everything once it is on the tray.
  10. Roast in the oven for about 15 minutes, or until things are golden brown and crispy on the edges.

Serve as a side with a protein of your choice.
