This recipe is fine for all stages of the program.
- 1-2 tbsp. chopped fresh cilantro (or basil if you prefer)
- 2 limes (juice and zest)
- 2 garlic cloves, minced
- 2 green onions, chopped
- 2 tbsp. Worcestershire sauce
- 1 tbsp. dry mustard powder
- ¼ cup extra virgin olive oil
- Pinch of salt and ground black pepper to taste
- 4-5 boneless skinless chicken breasts
- Combine all the ingredients and mix well in a bowl.
- Put the chicken in a large Ziploc bag or deep dish, then pour the marinade over the chicken.
- Marinate for 1-2 hours (or you can do it longer if you want a stronger taste but the marinade is very acidic so the chicken will appear white and soft on the outside).
- Preheat your grill. Cook the chicken over high heat for a few minutes on both sides.
- Then use indirect heat to cook the chicken until done.
- Let the meat rest for a bit. Then serve and enjoy.
NOTE: You can also make a bit of extra sauce with the lime juice & zest, extra virgin olive oil, green onions, minced garlic and cilantro/basil and pour sauce over top after, if you wish or use to toss with a side salad.
This would also be good used in place of the meat in a taco salad.
