Grilled Chicken with Cilantro and Lime Marinade

This recipe is fine for all stages of the program.

  • 1-2 tbsp. chopped fresh cilantro (or basil if you prefer)
  • 2 limes (juice and zest)
  • 2 garlic cloves, minced
  • 2 green onions, chopped
  • 2 tbsp. Worcestershire sauce
  • 1 tbsp. dry mustard powder
  • ¼ cup extra virgin olive oil
  • Pinch of salt and ground black pepper to taste
  • 4-5 boneless skinless chicken breasts
  • Combine all the ingredients and mix well in a bowl.
  1. Put the chicken in a large Ziploc bag or deep dish, then pour the marinade over the chicken.
  2. Marinate for 1-2 hours (or you can do it longer if you want a stronger taste but the marinade is very acidic so the chicken will appear white and soft on the outside).
  3. Preheat your grill. Cook the chicken over high heat for a few minutes on both sides.
  4. Then use indirect heat to cook the chicken until done.
  5. Let the meat rest for a bit. Then serve and enjoy.

NOTE: You can also make a bit of extra sauce with the lime juice & zest, extra virgin olive oil, green onions, minced garlic and cilantro/basil and pour sauce over top after, if you wish or use to toss with a side salad.

This would also be good used in place of the meat in a taco salad.
